It's a play on the pub name 'The Swan with two necks', which was a corruption of the term 'The Swan with two nicks'. That comes from Swan Upping that very old English practice of catching and marking Swans. Only in my image the Swan has two necks and a thousand nicks! Phew! Hope that helps.
